Our Aljotta is a quintessential Maltese fish soup, and one of the dishes I am most proud to serve. Rich, garlic-infused and brightened with fresh local herbs, it is hearty enough to remind you of the island's rustic past yet refined enough to satisfy a modern palate. Served with crispy bread, it is comfort food at its most authentic.
Shellfish Soup:
Our traditional Maltese shellfish soup is a celebration of everything the Mediterranean Sea has to offer. Served with mussels, clams, prawns and langoustine and accompanied by freshly baked bread, it is a dish that speaks directly to the heart of Maltese culinary tradition. Rich, warming and deeply satisfying.
Local Cheeselet:
The Maltese cheeselet, known locally as Ġbejna, is one of the most iconic ingredients in our cuisine. At Palazzo Preca, we serve it deep-fried and breaded, accompanied by a fresh tomato and chilli jam made in-house. A simple dish, but one that captures the very essence of Maltese food.
Traditional Rabbit:
No exploration of Maltese Mediterranean cuisine is complete without rabbit. At Palazzo Preca, I prepare it the traditional way, slow-simmered in garlic and wine until tender and full of flavour. The sauce is complex and deeply aromatic, reflecting the island's position as a cultural crossroads. It is a dish that every visitor to Malta should experience at least once.

The dish that holds the most special place on our menu is my mother Stella's signature trifle. Created by Stella and cherished by our guests for years, it has become one of the most beloved desserts we serve. It is the final, sweet note in a meal rooted in family, tradition and a genuine love of food.

I did not simply open a restaurant in the heart of Valletta. I created a place where the rustic soul of Maltese history meets the warmth and elegance of Mediterranean hospitality. My vision has always been to honour the traditions I grew up with while bringing them to life in a way that feels both timeless and personal.
Nestled inside a beautifully restored 16th-century palazzo on Strait Street, Palazzo Preca is my home, and every guest who walks through our doors is welcomed as part of it. The menu changes with the seasons, guided always by what the morning market provides and what the sea offers on any given day. From our Fresh Fish of the Day to our homemade pasta and slow-cooked rabbit, every dish is a reflection of that commitment.
